Pumpkin Season is Here

Every year I fall into the pumpkin trap. Pumpkin scones from Starbucks, pumpkin smoothies from Jamba Juice and pumpkin frozen yogurt. I'm a huge fan. I'm not a fan of coffee, so surprisingly, pumpkin lattes are not on my list, however, give me a pumpkin scone and a chai tea latte and I am one happy camper! When Starbucks discontinued their pumpkin scones I went on a mission to discover my own recipe for making the sweet treat. While they have returned to the menu at my local Starbucks this year, I still love making my version from scratch!

I wanted to share my recipe with you. These make great post-long run or race day treats and remind me that Fall is in the air!

Frosted Pumpkin Scone Recipe

Ingredients

1 cup All-Purpose flour

1 cup White Whole Wheat flour

7 Tablespoons granulated sugar

1/4 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground ginger

1/2 cup canned pumpkin

3 tablespoons half and half or non-dairy milk (I use soy milk)

1 large egg

6 tablespoons cold butter

Plain Glaze

1 cup powdered sugar

2 tablespoons milk or non-dairy milk

Spiced Icing

1 cup & 3 tablespoons powdered sugar

2 tablespoons whole milk or non-dairy milk

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

pinch of ground ginger and cloves

Instructions

1. Preheat oven to 425 degrees

2. Combine flour, sugar, baking powder, salt, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon cloves and 1/2 teaspoon ginger in a food processor. Add cold butter and pulse until the mixture is the texture of course cornmeal or sand.

3. In a separate bowl, whisk together pumpkin, half and half (or non-dairy milk), and eggs.

4. Fold wet and dry ingredients together. Roll into a ball and pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle. Cut the dough into 6 triangular slices.

5.Bake for 14-16 minutes on a baking sheet lined with parchment paper. Scones should begin to turn light brown when done. Remove scones from the oven and allow to cool.

6. While scones cool, prepare plain glaze by beating ingredients together with an electric mixer. Mix until smooth.

7. When scones are cool use a brush or dip the top of each scone in the glaze.

8. As the white glaze sets, prepare the spiced icing by combining ingredients in a separate bowl with an electric mixer. Place spiced icing in a ziploc bag, but off one corner and squeeze in a zig-zag pattern over the tops of the scones.

Enjoy by themselves or with your favorite hot beverage!
