Building more muscle and getting stronger has been a goal of mine this year. I love running, but I can't just run. That always leads me to injuries. So, I've been incorporating weight training 3-4 days a week to include with my running (that honestly has been lacking lately).

I eat a plant based diet, with limited dairy and eggs. I also can't really eat Whey protein, it's always made me feel sick. I've tried various plant based protein powders recently and have found a few different brands I love to alternate between. When it comes to protein, it's a good idea to get it from various sources, so mixing up your foods or the protein powders and supplements you take is a great way to keep variety in your life.

I've always liked Bob's Red Mill's products and was excited when I heard they were coming out with a line of protein powders that are all natural and plant based.

Chocolate. I love all things chocolate. So this was naturally the first on I tried. It's delicious mixed with coconut milk or in my Chocolate Protein Pancakes (recipe below).

Chai. I'm a Chai addict, not so much a coffee person. So this one was bomb! Great mixed in non-dairy milk or blended with milk and ice.

Vanilla. A great staple flavor that is great plain or mixed in smoothies of other recipes.

Unflavored & Unsweetened. Perfect for baking or when you are making smoothies where you don't want to compromise the flavor.

Chocolate Protein Pancakes

Protein Power Pancakes with Bob's Red Mill

The Recipe

  • 1 Cup Multigrain Pancake Mix
  • 2 tablespoons Bob's Red Mill Chocolate Protein Powder
  • 2 tablespoons flax seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • 1/4 cup rolled oats
  • 4 tablespoons mini chocolate chips
  • 1/2-1 cup water or almond milk (or non-dairy milk of choice)

Mix all ingredients together. Add liquid to desired thickness. For thicker pancakes add less liquid. For thinner pancakes, add more liquid. Cook on stove until lightly browned.

Top a stack of 2-3 pancakes with a sprinkling of chocolate chips, almond butter, 100% pure maple syrup and sliced bananas!
